The Basics

Butternut Squash Garbanzo Curry with Coconut Milk

and Saffron Rice

During this class, we will learn the basics of curry making with minimum, basic ingredients. This will allow you to drop in into mastering the basics of curry making as you conjure up a delightful vegetarian meal.

Ingredients - Shopping List

Butternut Squash Garbanzo Curry with Coconut Milk

1 medium butternut squash (or an orange pumpkin of your choice)

1 medium yellow onion, 3 cloves of garlic, 2 inches of ginger

1 serrano pepper or chili of your choice

Fresh black pepper, Salt, Vegetable oil (preferable grape seed oil or avocado oil)

3 medium red tomatoes

1 can of garbanzo beans (or fresh, soaked overnight and cooked in the morning)

1 can of coconut milk, 1 can of tomato sauce

Ground cumin, Ground coriander, Turmeric, Cumin seeds, Fresh cilantro

Saffron Rice

Delicately introducing you to the queen of spices. Wonderfully complements the curry.

1 cup of Basmati Rice

Salt

Ghee

Saffron

Tools You will Need

1 large frying pan or

1 medium sized pot (stainless steel is preferable)

1 wooden spoon to stir

1 chopping knife of your comfort

1 peeler

1 can opener

1 teaspoon
